BENEFITS OF MATCHA TEA

Matcha Tea is a green tea with vitamins A, B-complex, C, E, and K this  makes matcha  rich in catechin polyphenols - compounds with high antioxidant activity. All of these compounds offer protection against many kinds of cancer, help prevent cardiovascular disease and slow the aging process.

MATCHA  RECIPES

Matcha Latte

Serves: 1 latte
Ingredients
  • ½ - 1 teaspoon Aiya Cooking Grade Matcha
  • (or 1 tablespoon Aiya Matcha Zen Cafe Blend which is lightly sweetened)
  • ¼ cup hot water
  • ¼ cup warmed coconut milk
  • optional - sweetner of your choice, to taste
Instructions
  1. Sift your matcha so it is lump-free (optional - I skip this step when I'm too lazy )
  2. Spoon the matcha into a large mug. Add the hot water and coconut milk and whisk briskly, in an up and down motion, until frothy - about 30 seconds or so. (You can also use a small kitchen whisk if you don't have a matcha whisk).
  3. Taste and add additional water, coconut milk, and/or sweetener to your liking. (I added just a bit of honey).
Notes
I used light coconut milk, but you could use full fat coconut milk if you wanted a richer latte.

Matcha Chicken Tenders

Here is a healthy way to have chicken tenders, baking them and having a healthier breadcrumb mixture. Matcha is currently a super trendy ingredient, and for a good reason, it's high in antioxidants and calming properties.

Ingredients
·        2 tbsp soy sauce
·        1/4 cup fresh-squeezed orange juice
·        1/2 tsp orange zest
·        1 tsp toasted sesame oil
·        1 tsp rice wine vinegar
·        1 tsp agave
·        1 1/2 cups breadcrumbs
·        1 teaspoon chia seeds
·        2 tsp matcha powder
·        1/2 cup flour
·        2 large eggs, beaten
·        1 lb chicken tenders

Directions
1. Preheat the oven to 400°F. Line a baking sheet with parchment paper.

2. In a small bowl, whisk together the soy sauce, orange juice, zest, sesame oil, rice vinegar, and agave to make the dipping sauce. Set aside to allow the flavors to marinate while you prepare the chicken.

3. In a pie plate or shallow bowl, mix together the breadcrumbs, chia seeds and matcha powder. In a separate shallow bowl, mix together the flour. Put the beaten eggs in a third shallow bowl. Working with one tender at a time, dredge the chicken in the seasoned flour, then the egg, followed by the matcha breadcrumbs. Place the tenders on the prepared baking sheet. Bake tenders for 10 minutes or until lightly golden and cooked through.

4. Serve with the dipping sauce on the side.
